W&W, part I
A reflective dinner around Barcelona’s food culture
What are the origins and cultural traces of our foods?
How can we acknowledge our connected communities through food?
The way we understand our histories and memories influences our perception of the present and future. Join us on a journey along different arcs of narrativity through a dining experience, where we transform seemingly familiar ingredients into new flavours of surprise and curiosity. Together with you we want to create an intimidate space of reflection and interaction while tasting various bites that sometimes marry or collide.
Wine & Wonder is a collaborative project between food-designer Nicole Vindel, chef Xavi Morron, artist Cara Schanuel, New York based city planner Marquise Stillwell, and myself. The project is an ongoing investigation of Barcelona’s food culture and ecosystems through organising a sequence of dinners.
In Part I. we teamed up with Barcelona Design Week and natural wine company The Green Wine Philosophy. For this dinner, we created a menu based on several participatory courses: from the collective ritual of breaking bread to create ‘Migas’, a traditional Spanish dish of fried breadcrumbs. To a historical timeline of dips — from the Sephardic era of the 14th century, the arrival of Chinese immigrants in the 1920’s, to the more recent Latin American influence on Barcelona. We ended the evening with a dessert completley urban foraged from the parcs and road-greenery of the city.
